The atol de elote is a typical drink from El Salvador, well prepared and tasted when it is the time of this tender fruit of corn which can be found at low prices in its season. This recipe does not require many ingredients and is very loved by those who decide to try it.
The ingredients needed are:
- 1 gallon of milk
- 12 fresh shelled corn
Then we started with the preparation of the atol de elote. Liquefy the corn beads (also can be ground), then add in a deep pan add this pasta together with the milk, cinnamon, and sugar. You must constantly move the atol so sticking in the pan to a boil. Then leave it another 20 minutes, always stirring.
To serve it, the best way is to do it when it is hot and you should strain it previously. Some people tend to add beans boiled corn or ground cinnamon, to emphasize its flavor.
